Vineyards: Sandy and calcareous vineyards located in La Mancha, southern Spain

Winemaking: Traditional winemaking in stainless steel vats for a further de-alcoholization by vacuum distillation with aroma recovery. Four hour maceration. The wine is then lightly carbonated.
